1 can kippers
2 slices bread (whole grain/ sourdough/ rye/ pumpernickel/ gluten free bread)
2 leaves lettuce of choice
1 large tomato, sliced
½ onion, sliced thinly
- Toast the bread then drizzle with olive oil.
- Lay the lettuce on the toast, then avocado, tomato, onion and finally the kippers.
- Squeeze over some lemon juice (to taste) and grind over some black pepper.
