4 large eggs
4 slices smoked salmon
1 avocado, sliced
2 slices bread of choice (optional)
Small handful parsley/ coriander, chopped
- Break the eggs into a bowl and mix with a fork, adding a pinch of salt.
- Heat 1/2 tbsp olive oil in a pan then add the eggs and turn down to a low heat.
- Meanwhile toast the bread if having.
- Arrange the avocado and salmon on two plates.
- Once eggs have cooked serve them on to the plates and sprinkle over the fresh herbs and a grind of black pepper.
